Tofu Nuggets with Katsu Ketchup

Ingredients


  • 400g firm tofu, diced into chunks

  • 2 tbsp plain flour

  • 100ml oat milk

  • ½ cup panko breadcrumbs

  • 3 tbsp cornmeal

  • ½ tsp cumin

  • ½ tsp chilli powder, optional

  • ¼ tsp cayenne pepper, optional

  • ¼ tsp onion powder

  • ½ tsp salt

  • Ample Katsu Ketchup for serving!


Directions


  1. Preheat your oven to 200C (400F).

  2. Mix together the plain flour and milk in a bowl.

  3. Mix together the breadcrumbs, cornmeal, cumin, chilli powder and cayenne, if using; onion powder, and salt in a separate bowl.

  4. Dredge the tofu chunks in the milk mixture, shake off excess and then dredge in the crumb mixture.

  5. Place nuggets onto a baking paper lined tray. Spray with oil for extra crispness.

  6. Bake for 30 - 40 minutes, tossing halfway through.

  7. Serve nuggets fresh from the oven with ample katsu ketchup for serving!
