Tofu Nuggets with Katsu Ketchup
Ingredients
400g firm tofu, diced into chunks
2 tbsp plain flour
100ml oat milk
½ cup panko breadcrumbs
3 tbsp cornmeal
½ tsp cumin
½ tsp chilli powder, optional
¼ tsp cayenne pepper, optional
¼ tsp onion powder
½ tsp salt
Ample Katsu Ketchup for serving!
Directions
Preheat your oven to 200C (400F).
Mix together the plain flour and milk in a bowl.
Mix together the breadcrumbs, cornmeal, cumin, chilli powder and cayenne, if using; onion powder, and salt in a separate bowl.
Dredge the tofu chunks in the milk mixture, shake off excess and then dredge in the crumb mixture.
Place nuggets onto a baking paper lined tray. Spray with oil for extra crispness.
Bake for 30 - 40 minutes, tossing halfway through.
Serve nuggets fresh from the oven with ample katsu ketchup for serving!
